Fresh Lumpia Spring roll wrapper/ filling and Sauce full recipe
Finally, I made them perfect taste like i bought at Store. MY Italian family love this so much Consider as Antipasto but in my country of origin, I used to eat this as Snacks/MEryenda.
NOW I want you to share with you guys Honestly on how I made them. After I tried so many times and throw a klg. Of flour to achieved this 😅

Ok here's all you need!
For the wrapper: ( makes 4 sheets)
*3 and 1/2 Tbsp. Of Flour 00/ or APF
*1 egg whites
*1/2 tsp. Of salt
*180 ml of warm water
METHOD:
*In a large bowl, BEAT well the egg whites first, add the flour, salt and warm water. Mix thoroughly until there is no lumpy bits. (The batter should not too runny.)
*in a Non stick medium Pan drop the 3 tbsp full/ 1/4 cup of the batter in the middle, then tilt the pan so the batter will spread evenly.
Note: heat the pan at lower fire. If the pan is too much hot you couldn't tilt the batter EVENLY. USE wet cloth like or linen to clean the pan before adding the next batter.
* Just cook the wrapper in one side, when the texture is a bit wet on other side its normal. Reapet the process until finish. See on photos on top. You can use spatula or just by hand to remove them. 😉
For making the filling: I used
150 gr. Mung beans sprout
20 gr. Ground pork/pollo
1/4 cup peas/pesille
2 egg yolks. ( I included yolks here, whites for the wrapper)
Onions and salt.
Cooking oil
Method:
* Do stir fry, heat the pan with oil, add onions then browning meat, add salt, pesille and the sprout. (cook 3 min.) Don't need to overcooked the sprout!
*Lastly stir with egg yolks. Set aside 20 min. To cool
FOR the Sauce:
*2 tbsp. Balsamic vinegar
*1/2 cup of water
*1/2 tsp. Of Cornstarch
* 1 tbsp. Soy sauce
*1 and 1/2 tbsp. Of sugar
Method:
*bring to boil the Mixture of Balsamic, soy sauce, and sugar over medium high heat for 5 min. Latter melt the Cornstarch in 2 tbsp of water then stir in the boiling mixture. ( Set to low heat and keep stirring more min.)
* let cooled, you can see the real taste of this sauce when completely cooled. It is little bit sweet in taste.
To wrapped fresh lumpia:
* pour in the wrapper 1 1/2 tbsp. Filling add lettuce/any green salad. FOLD One side before you roll/ close them.
*garnish sauce on top!
*Serve fresh lumpia warm
