Asparagi Soup/ Asparagus Cream Recipe


This is one of our comfort food every cold season here in North Italy. We Have a long season of Cold, so I always find  good soup to enjoy at home.

Here's what You'll need: ( more or less good for 4 servings)

*450g (cleaned Asparagi)
*250 G ceci
*1/4 c  cream/whole milk
*Cepolla
*Pepper
*Sale
*Lt. Of hot water
*Cooking oil
METHOD: Sautéing

Step 1. Wash and Clean Asparagus and onions, cut a very small dice.
ENJOY!

Step 2: In a large Pot,  heat  oil and onion over medium high heat wait until onions turns lightly brown. THEN pour diced Asparagus and checkpeas, salt to taste after Stirr occasionally for 2 minutes

Step 3:  Add Litter of Hot water, Simmer for 15 min. WHEN it's cooked, Blend well using Immersion blender.

Step 4: after well blended, The soup should be a little bit thicker, you can add teaspoon of Cornstarch optional depend on your taste. THEN pour cream or milk and lastly pinch of pepper.

Serve while hot!
