Carrots Gnocchi/ Italian dumplings made with carrots


Gnocchi made with carrots is one of my favorite and delicious recipes I have on my list. I just made Gnocchi every time I have many vegetables like carrots  that started to throw away. So don't waste veggies, Save it for this delicious Gnocchi😉

So here's what You'll need: (serve 4 persons) 

*400 g carrots
*200 G Cake flour/soft flour( i used  150g *Semolina + 50g APF) add if needed for dusting. 
*2 tbsp Olive oil
*teaspoon of salt
*1 Medium egg


For  the cream:
*150g Speck diced
*Cream 1/2 cup
*Grated parmessan
*Chopped onions and garlic


Instructions:

1.Clean and steam chopped carrots for atleast 5 min. (halfcooked) Then Blend together with oil, eggs, and salt til "Puree" texture. 

2. In a Bowl combine carrots puree and Flour using Fork, (No Knead,  shape it a ball ) dust flour on a pastry board.

3. Divide dough into a small pieces to make log shape then cut into a small pieces using fork. (if you find difficult to roll in making log shape just floured the outside part of the dough ) Set aside and let rest atleast 1 hour.

5. Prepare the salted boiling water. bring gnocchi to a Boil by batches  for atleast 3 min. Or until Gnocchi  will float on top. Strain and pour in the sauce pan with your ready made sauce. 
(Note: Gnocchi dough mixture is normal Lil bit wet.. Just dust outside with  flour and use Spatula to help form logshape so won't stick on hand😊) 

How to prepare  cream sauce with Speck?
1. IN a Large saucepan sauté diced speck in chopped garlic and onions. Wait until it turns lightly brown (2 min.) THEN add cream,  this stage you can Combine the Cooked Gnocchi stirring constantly until cream thickens. Just add milk or water if the cream is too much thicked. 

2. Serve with Parmeggiano regiano
