PANDE COCO is one of my Favorite bread in my country of Origin (Philippines). It's a kind o sweet bread or My Italian family called it "Brioches" I love to bake it sometime just to satisfy my cravings for my Snacks and Breakfast.
Here's all you'll need:
INGREDIENTS: (FOR 12 TO 14 PCS)
* 300g All Purpose Flour
* 7 g Instant yeast
* 150 ml Water or milk
* 1 small egg
* Tsp. Salt
* 1/4 cup sugar
* 3Tbsp veg. Oil
filling:
1 1/2 cup Dissecated Coconut. I used Fresh "Sapal"
1/4 Brown sugar
EGG Wash * 1 yolk and tbsp of Condensed milk mix with Tbsp of water, or you can use any brand of Milk.
PROCEDURE:
Mix all dry ingredients first. YEAST, flour, Salt and Sugar. Make a hole in the middle of the flour, then Add Wet Ingredients Egg, water, Oil whisk Lightly and slowly combine it. START kneading (Dust flour if it's sticky) until the dough turns out soft / smooth Then Form a Ball Cover And rest atleast 1 hour and half in room temp (26 to 28c) or until doubled in sizes.
Punch in the middle to Remove air. Form a Ball and then cut in Two pieces. Dust and roll the dough divide it by pieces (50g). FLATTEN with the help of rolling pin then Put the coconut filling in the middle of the dough. Bring closer both ends then press it to close well. Put in the baking pan with baking sheets (open is on down part) and Poke w/ Fork to make holes.DO THE same with the remaining pieces of the Dough until finish. LET set 20 min again to double in sizes.
Bake at preheated oven 170c for 20 min. (brushed Egg wash on top) Or until it turns Golden Brown.
For the Filling:
JUST cook Dissecated Coconut in brown sugar add water if too much dry. If using Fresh Coconut Blend it and cook until liquid is absorbed. Let Cool before using it.
