Easy Arroz Caldo Recipe

 

Arroz Caldo is a filipino dish  made with rice preferably "Long grain or Rice per dolce"  its  similar of Italian rice recipe Called "Risotto".  And in filipino dish similar with "Lugaw o Goto".  Arroz Caldo is full of toasted Ginger Flavor and the natural chicken stock taste. 

It's good to cook  this in cold season.  Serve as breakfast/ Lunch. 

Here's all you'll need: 

INGREDIENTS: 

*2 1/2 c white long grain Rice

* 150g chicken thigh (with skin and bones of meat it gives more flavor) 

* 2 tbsp of Soy sauce 

* Cooking oil and pinch of Salt

* 1 Chopped onions / Spring onions

* A Sliced of Ginger in stripes ( depend on your taste, add more if you want strong flavor) 

*2 boiled eggs for toppings

*half lt. Of hot water

INSTRUCTIONS: 

STEP 1: In a large skillet, heat oil over medium fire. ADD fresh Ginger (cuttted thin strips) keep browning/ roast in few minutes (2 min.)  Then add chopped onions  and Chicken meat (cutted thin strips). Sauté over medium high fire until meat cooked. Sprinkle with Salt and soy sauce.  Cooking time more or less 5 min. 

Step 2 : Once the Meat is completely cooked, add  cups of Hot water. Simmer 20 min. AT low fire ( purpose is TO HAVE  a good flavor of stock  the longer the better). Then, Pour the cups of white Rice while keeping it  slowly  boiling until  Rice completely cooked. ( NOTE: just pour hot water every time you can see it's totally consumed or dry)  

cooking time for the Rice more or less 15 to 20 min. 

Step 3: Serve Immediately, Garnish with spring onions, boiled eggs on top and roasted Ginger. 😋
